3-Ingredient Pancakes

How about easy-peasy 3-ingredient pancakes for breakfast? If you're planning on walking a turkey trot, it provides healthy fuel. To make 3 small pancakes, you only need 1 ripe banana, 1 large beaten egg and 2 tablespoons whole-wheat flour. Mash the banana, and whisk in the egg and flour, stirring well until combined. Heat a skillet over medium-high heat, and add about 2 tablespoons of batter at a time for each pancake. When the edges start bubbling, and the bottoms are golden brown, flip them over and cook one or two minutes more until done. Top with fresh berries and pure maple syrup.

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
