Bruschetta Scrambled Egg Toasts

Instead of having eggs and toast, how about putting the two together? It's a simplified way to combine two breakfast faves, and all you have to do is scramble eggs with chopped bacon and cherry tomatoes, plop the mixture onto toasty whole-grain bread slices and garnish with fresh snipped chives. You get a nice healthy dose of protein and good-for-you carbs to keep you satiated until it's time to snack and have a drink before dinner.

Dive into summer with this fresh, light and healthy mango salad!

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
