Maple Bacon Breakfast Pie

Everyone loves avocado on toast, but sometimes its nice to take a trip down memory lane for breakfast. This breakfast pie involves everyone's fave morning meal ingredients, and is topped with an impressive bacon lattice. If you’ve got guests over for brunch, this recipe is sure to win you gold stars!

Ingredients (for 4 people):

  • 1 shop-bought, 9-inch pie crust
  • 1 cup grated cheese
  • 4 eggs
  • 2 cups whole milk
  • 3 slices thick cut bacon (cooked and crumbled) + 10 slices thick cut bacon
  • 3 scallions (sliced)
  • 2 cups cooked potatoes (diced)
  • 3/4 tsp salt
  • 1/2 cup maple syrup (for brushing)

Instructions:

  1. Preheat the oven to 350°F.
  2. Whisk the eggs, milk, and salt in a bowl. Add the cheese, potatoes, spring onions and crumbled bacon. Stir well.
  3. Put the pie crust in a 9-inch pie dish, and pour in the egg mixture. Bake for 40 min. The pie should be firm. 
  4. Remove the pie from the oven, and allow to sit.
  5. Increase the temperature of the oven to 450°F.
  6. Whilst the oven warms up, weave the bacon into a lattice on top of the pie. Brush each strip of bacon with the maple syrup. Ideally, you should use a pastry brush if you have one. If the bacon strips are hanging over the edges of the pie, don't worry as they'll shrink in the oven.
  7. Return the pie to the oven for 15 min.
  8. Once done, let the pie sit for 5 min. and enjoy!
