These golden-brown beauties are fabulously funky, with their thick stems, their blooming caps, and their uneven edges. Harvest time is usually from the beginning of July until the end of October, so they're around early fall. They like to grow near spruce trees, and are a little spicy with a slight peppery taste. They're delicious sautéd and served on toast, or in a mushroom pappardelle pasta dish.
