Bourguignonne Fondue

Bourguignonne Fondue is the perfect dish for a gathering with family or friends. Pieces of meat are dunked into very hot oil and quickly fried.

Surrounding a fondue burner, each guest pierces a cube of beef with a fondue fork and places it into the pan balanced on top. A selection of delicious sauces are usually served with this dish — we suggest mayonnaise, béarnaise, and tartar sauce. Serve with boiled, buttery baby potaotes and oven-baked veggies.

Ingredients:

  • 1 1/2 lbs. beef fillet (cut into 1cm squares)
  • 1/4 cup olive oil
  • Salt and pepper (+ any other desired seasoning)

Instructions:

  1. Distribute the beef cubes into individual bowls (one for each guest) and season with salt, pepper, and any other desired seasoning.
  2. Keep refrigerated for 20 mins.
  3. Fill the fondue pot or caquelon 1/3 way with oil, and place on the fondue burner or stove. If using fondue burner, follow instructions. The fondue burner should be very hot so that the oil too, gets very hot.
  4. Each guest should have a fondue stick. Taking turns, sear a beef cube and place into the oil for 2 mins. Flip and cook until medium-rare (2 further mins.) and transfer to a place to be enjoyed with sauces and roasted veggies.
