Ingredients (serve 4):
1.1 lb potatoes
1 small red onion
2 tbsp white wine vinegar
3 tbsp olive oil
1 tsp Dijon mustard
Salt
Pepper
Fresh parsley, chopped (optional)

Instuctions:
Cook the potatoes until tender, peel them, and let them cool. Slice them into thin pieces. Finely chop the red onion.
In a cup, mix the white wine vinegar, olive oil, and vegetable broth. Add the Dijon mustard, salt, and pepper to taste. Stir everything well to combine.
In a large bowl, combine the sliced potatoes and chopped red onion. Pour the dressing over the potato mixture and gently toss to coat.
