Tangy Potato Salad

Instead of a high-calorie dressing with mayonnaise, you can prepare potato salad with a dressing made from broth, vinegar, and oil. Here's how to make it:


Ingredients (serve 4):

  • 1.1 lb potatoes
  • 1 small red onion
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • 1 tsp Dijon mustard
  • Salt
  • Pepper
  • Fresh parsley, chopped (optional)
  • Vegetable broth

Instuctions:

  1. Cook the potatoes until tender, peel them, and let them cool. Slice them into thin pieces.
    Finely chop the red onion.
  2. In a cup, mix the white wine vinegar, olive oil, and vegetable broth. Add the Dijon mustard, salt, and pepper to taste. Stir everything well to combine.
  3. In a large bowl, combine the sliced potatoes and chopped red onion. Pour the dressing over the potato mixture and gently toss to coat.
  4. Let the potato salad sit for about 1 hour to allow the flavors to meld together.
    Before serving, sprinkle with fresh chopped parsley if desired. Enjoy your meal!
