Light Potato and Leek Hash Browns from the Oven

Looking for a healthier twist on a classic comfort food? These light potato and leek hash browns are baked in the oven, making them a guilt-free option that's still full of flavor. Perfect for breakfast, brunch, or even as a side dish, these hash browns are easy to make and packed with nutritious ingredients, such as leeks, garlic, and pumpkin seeds. 


Ingredients (serve 4):

  • 3 cups cooked potatoes (about 1 lb)
  • 3 cups leeks, sliced into rings (about 1 large leek)
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 2 tsp paprika powder
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • 1 egg
  • Pumpkin seeds to taste
  • Salt and pepper

Instructions:

  1. Preheat the oven to 350°F. Grate the cooked potatoes into a bowl.
  2. Sauté the leeks in a pan for 5 minutes until they are softened. Season with paprika powder.
  3. Add the sautéed leeks to the grated potatoes. Mix in the Parmesan cheese, cornstarch, egg, and pumpkin seeds. Season with salt and pepper to taste.
  4. Form small balls from the mixture and flatten them into patties.
  5. Place the patties on a baking sheet lined with parchment paper and bake at 356°F for 15-20 minutes until golden and crispy.
  6. Serve the hash browns as desired.
