20 Quick Recipes You Can Make with a Blender

Gazpacho
Gazpacho is a refreshing cold soup, perfect for hot days. Made with fresh vegetables, it's light, healthy, and easy to prepare.
Ingredients (serves 4):
- 6 ripe tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 small red onion
- 2 cloves garlic
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
- Optional: bread cubes or fresh herbs for garnish
Instructions:
- Wash and chop the tomatoes, cucumber, bell pepper, and onion. Peel the garlic cloves.
- Add all the vegetables to a blender, along with the tomato juice, olive oil, and red wine vinegar. Blend until smooth.
- Season with salt and pepper to taste. Blend briefly to combine.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve cold, optionally garnished with bread cubes or fresh herbs.
