Chocolate Pudding with Avocado

A special highlight that can be easily prepared in a blender is this vegan chocolate pudding. It tastes wonderfully chocolatey and has fewer calories than "real" chocolate pudding.

 

Ingredients (serves 4):

  • 2 large avocados - peeled, pitted, and cubed
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 1/2 cup coconut milk
  • 2 tsp vanilla extract
  • A pinch of ground cinnamon

 

Instructions:

  1. In a blender, puree the avocados, cocoa powder, brown sugar, coconut milk, vanilla extract, and cinnamon until smooth.
  2. Pour the pudding into a container with a lid and chill in the refrigerator for about 30 minutes before serving.
