Not as heavy as traditional tiramisu and extra fruity: This strawberry tiramisu is perfect when the strawberry season is in full swing. Of course, you can also use other berries or fruits instead.
Ingredients (serves 6):
3 cups strawberries
2 tbsp sugar
1 tsp lemon juice
2 tbsp strawberry jam
1 cup mascarpone cheese
3/4 cup heavy cream
1 cup powdered sugar
1 tsp vanilla sugar
2 egg yolks
7 oz ladyfingers (about 30)
1/3 cup strawberry juice
Instructions:
Wash the strawberries, remove the stems, slice them, and mix with sugar and lemon juice. Let them sit for about 15 minutes until they release their juice.
Stir in 2 tbsp strawberry jam to intensify the strawberry flavor.
Place the mascarpone cheese in a bowl and smooth it out. Whip the heavy cream until stiff and fold into the mascarpone.
Stir in powdered sugar and vanilla sugar until the mixture is smooth.
Briefly dip the ladyfingers into the strawberry juice, making sure they absorb just enough moisture without getting too soggy.
Spread a thin layer of mascarpone cream at the bottom of a baking dish. Layer the dipped ladyfingers on top. Add a layer of strawberries, then finish with another layer of mascarpone cream, smoothing it out.
Repeat depending on the size of your dish.
Let the strawberry tiramisu sit in the refrigerator for at least 4 hours (better overnight) and garnish with fresh strawberries or mint leaves before serving.
