Ingredients (for 4-6 servings):
1 lb carrots, peeled and cut into sticks
1½ tbsp maple syrup
1 tbsp olive oil
1 tsp smoked paprika (optional)
Salt and pepper, to taste
Instructions:
Preheat oven to 400°F (200°C).
Toss carrots with maple syrup, olive oil, paprika, salt, and pepper.
Spread in a single layer on a parchment-lined baking sheet.
Roast for 25–30 min. flipping halfway, until golden and slightly crispy.
