Now to the defrosting. The best method is to take the bread out of the freezer 3 hours before you plan to eat it. Take it out of it's foil and plastic bag, and let it come to room temperature.  Next re-wrap it in a layer of parchment paper, then a layer of foil, and put it in a pre-heated oven (400°F / 200 °C is good) for 3 or 4 minutes to heat it through and give it a crisp, crunchy  texture.
