If you are serving turkey on the day, plenty of things can go wrong... 

You forgot to defrost it: Speed up the process by giving it a cold-water bath. Here's how.

It's under-cooked: The fastest way to get that bird cooked is to break it down and spread out the pieces on a baking tray. Crank the heat to a high temperature (around 200°C / 390 °F) and check on it every 15 minutes or so, using a meat thermometer to see when it reaches 75°C /165°F. 

It's dry: Carve it up in the privacy of the kitchen, and drizzle warm poultry stock over the slices, or drown the whole thing in gravy.
