Glycation

Glycation is the term for when sugar that enters your body binds to proteins (collagen, for example). This, in the process, creates what are known as "advanced glycation end products", or AGEs. Sound harmless? They really aren't.

AGEs have been linked to a variety of health problems, including several degenerative diseases such as diabetes, kidney disease, and Alzheimer's. A wave of recent research, such as this study, have also uncovered their ties to premature aging, also known as "sugar sag".
