1999: Bourdain spills industry secrets in The New Yorker

In 1999, Bourdain decided to submit an article called "Don't Eat Before Reading This" to The New Yorker, detailing his experiences in the restaurant industry with a frank, raw and humorous approach. On customers ordering their meat well-done, he wrote: "People who order their meat well-done perform a valuable service for those of us in the business who are cost-conscious: they pay for the privilege of eating our garbage." His talent for storytelling was so immediately apparent that he scored a book deal shortly after.
