Let It Rest

As tempting as it is to just cut into the ham as soon as it comes out of the oven, resist that urge! Like all meat, you need to let it rest 15-20 minutes so that the juices settle and the ham stays moist. The internal heat also keeps rising once it's out of the oven, so it needs time to come to temperature. Don't worry, it will be chow time soon enough!
