Ronald McDonald first appeared in a regional 1963 TV spot, where he was portrayed by actor and former Today Show weatherman Willard Scott. Two years later, the smiling clown went national in an ad aired during the Macy's Thanksgiving Day Parade. Scott was booted from the role for being overweight — a true ironic twist. In recent years, there has been a push to retire Ronald McDonald over concerns that the company's kid-centric marketing has contributed to the rise in childhood obesity.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
