Schweinshaxe, or roasted pork knuckle, is a fatty, salty and greasy German specialty that's particularly popular in Bavarian cuisine. It used to be a peasant dish, due to it being an inexpensive and tough cut of meat with the bone attached. Now, it's served at breweries around the country, with potatoes and sauerkraut or giant potato dumplings that help soak up its juices. When cooked properly, it's got a deliciously crispy pork rind and moist meat underneath. If you're not afraid of gnawing around the fat pad, you can actually eat everything up to the bone.
