Slow Cooker Salsa Chicken

Place the chicken in a slow cooker
- 2 lbs. (32 oz.) chicken breasts or thighs, boneless and skinless
- 1 cup salsa, homemade or purchased
- 1 cup petite diced canned tomatoes (choose low-sodium)
- 2 tbsp. taco seasoning
- 1 cup onion, diced fine
- 1/2 cup celery diced fine
- 1/2 cup carrots, shredded
- 3 tbsp. sour cream
Cheesy Chicken Dip

Place chicken in slow cooker
- 2 lbs. boneless chicken thighs
- 14 1/2oz. can diced tomatoes with chilies (undrained)
- 1 pkg. chili seasoning mix
- 2 cans hominy drained (can use kidney beans)
- 1 can 15oz tomato sauce
- 2 cups shredded chedder cheese
Slow Cooker Rosemary Chicken

Place potatoes, carrots, onions, salt and pepper in slow cooker
- 6 medium halved red potatoes
- 3 medium carrots, sliced
- 2 medium onions, cut into wedges
- 1 tsp. salt
- 1/2 tsp. pepper
- 2-4 sprigs fresh rosemary
- 1 (3-3 1/2 lbs.) whole chicken
- 1/2 cup fat-free chicken broth
Bacon Water Chestnuts

Wrap each piece of bacon around one water chestnut
- 2 pkg. ready to serve bacon
- 2 cans (8oz each) whole water chestnuts, drained
- 3/4 cup mayonnaise
- 3/4 cup packed brown sugar
- 1/2 cup chili sauce

Teriyaki Steak

Slice meat thinly across the grain
- 1 lb. beef sirloin
- 1/2 cup soy sauce
- 3 tbsp. brown sugar
- 2 tsp. powdered ginger or 1 tbsp. finely chopped ginger root
- 1 garlic glove, crushed
- 1/2 tsp. monosodium glutamate (optional)
- 1 medium onion, finely chopped
- 1/4 cup water
Savory Meat Balls

Mix all ingredients except consommé
- 3/4 lb. ground chuck
- 1/4 lb. ground veal
- 1 small onion, chopped
- 1 small apple, chopped
- 1 egg
- 1/2 cup dry bread crumbs
- 1 tsp. horseradish
- 1/4 cup water
- 1 tsp. savory seasoning
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 cup consommé
Breakfast Casserole

Preheat oven to 325 degrees
- 1 pkg. pork sausage cooked, crumbled and drained
- 10 eggs
- 3 cups of milk
- 2 tsp. dry mustard
- 8oz (2 cups) shredded cheddar cheese
- 6 cups cubed bread
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1/2 cup mushrooms, sliced (optional)
- 1 medium tomato chopped (optional)
- 1/2 cup green onions sliced (optional)
Guacamole

Cut the avocados in half. Remove pits and scoop the flesh and mash
- 4 ripe Haas avocados
- 3 Tbsp. freshly squeezed lemon juice (1 lemon)
- 8 dashing hot pepper sauce (optional)
- 1/2 cup small diced red onion (1 small onion)
- 1 large garlic clove, minced
- 1 tsp. kosher salt
- 1 tsp. ground black pepper
- 1 medium tomato, seeded and small diced
Pickling

Mix all together. Add vegetables
- Slice up and layer in tall container.
- 2 cloves of garlic
- 2 cups oil
- 2 cups red onion
- 1/2 tsp. pepper
- 1 tsp. dry mustard
- 1 pkg. good seasonings Italian salad dressing
Beef Teriyaki steak strips

Cut meat into 1 inch wide strips diagonally across the grain
- 2 lbs. flank steak or top round
- 1/4 cup chopped green onions
- 1/2 tsp. salt
- 1 cup canned bee consommé undiluted
- 1/2 cup red table wine
- 1/3 cup soy sauce
- 1 glove garlic, mashed
- 3 Tbsp. lime juice
- 2 Tbsp. brown sugar or honey
