Italian Cookies

This is a cookie that my mom used to make
- 5 cups flour
- 2 cups sugar
- 3 tsp. baking powder
- 5 eggs
- 1/2 lb. butter
- 1 tsp. anise extract
- 1 tsp. almond extract
- 1 tsp. vanilla extract
- walnuts or almonds (optional)
Creamy Chicken Enchiladas

Mix soup, sour cream, picante sauce and chili powder
- 1 can (10 3/4oz) cream of chicken soup
- 1 container (8oz) sour cream
- 1 cup picante sauce
- 2 tsp. chili powder
- 2 cups chopped cooked chicken
- 1 cup shredded Monterey jack cheese
- 10 fajita size flour tortillas
- 1 medium tomato, chopped
- 1 green onion, sliced
Slow Cooker Corned Beef and Cabbage

Place the carrots, potatoes, and onion into the bottom of a slow cooker
- 4 large carrots, peeled and cut into matchstick pieces
- 10 baby red potatoes, quartered
- 1 onion, peeled and cut into bite sized pieces
- 4 cups water
- 1 (4 lb. ) corned beef brisket with spice packet
- 6 oz. beer
- 1/2 head cabbage, coarsely chopped
Stuffed Zucchini and Red Bell Peppers

Preheat oven to 400 degrees F
- 2 Tbsp. olive oil
- 1 small onion, grated
- 1/4 cup chopped fresh Italian parsley leaves
- 1 large egg
- 3 Tbsp. ketchup
- 3 garlic cloves, minced
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 1/3 cup grated Pecorino Romano ( or Parmesan)
- 1/4 cup dried plan bread crumbs
- 1 lb. ground turkey, preferably dark meat
- 2 zucchini, ends removed, halved lengthwise and crosswise
- 1 short orange bell pepper, halved and seeded
- 1 short yellow bell pepper, halved and seeded
- 1 short red bell pepper, halved and seeded
- 1 1/2 cups marinara sauce
Simply Lasagna

Preheat oven to 350 degrees
- 1 lb. ground beef
- 2 1/2 cup shredded mozzarella cheese, divided
- 1 container part skim ricotta cheese
- 1/2 cup grated Parmesan cheese, divided
- 1/4 cup chopped fresh parsley
- 1 egg, lightly beaten
- 1 jar (26 oz.) spaghetti sauce
- 1 cup water
- 12 lasagna noodles, uncooked
Brandy Glazed Ham

Put the ham, fat side up in a pan
- 1 smoked or ready to eat ham
- 1 cup brown sugar
- 3 Tbsp. prepared mustard
- 1/2 cup brandy
Spinach Quiche

Mix all together in a large bowl
- 1 pkg. ricotta cheese
- 2 pkg. frozen spinach thawed, cooked and squeezed
- 1 pkg. shredded Monterey Jack cheese
- 1/2 cup graded Parmesan cheese
- 1 tsp. oregano
- 1 tsp. nutmeg
- 2 or 3 eggs
- 1 tsp. salt
- 1/2 tsp. pepper
- Frozen pie crust
Cheesy Chili Dip

Place block of cream cheese on a microwavable plate
- 1 pkg. (8oz) cream cheese
- 1 can (10.5oz.) chili
- 1/2 cup shredded cheddar cheese
- 2 Tbsp. chopped cilantro
Bacon wrapped Water Chestnuts

By cellis
Wrap one piece of bacon around each water chestnut and secure with toothpicks
- 2 pkg. (2.1oz. each) ready to serve bacon.
- 2 cans (8 oz. each) whole water chestnuts, drained
- 3/4 cup mayonnaise
- 3/4 cup firmly packed brown sugar
- 1/2 cup chili sauce
Jalapeno Poppers

Preheat oven to 350 degrees
- 12 medium fresh jalapeno peppers halved and seeded
- 4 oz. cream cheese, softened
- 1 1/2 cups shredded smoked Gouda
- 2-3 slices bacon, cooked and crumbled
