Coconut Chicken Tenders

  • 3-4 skinless chicken breasts (cut into strips)
  • 2 cups finely shredded coconut
  • 2-3 eggs (beaten)
  • 5 cup coconut oil (half inch in your skillet)
  • salt and pepper to taste

Step 1

Melt coconut oil in skillet over medium heat

Step 2

Dip chicken strips in beaten eggs, then roll in shredded coconut.

Step 3

Place chicken into oil and fry till golden brown.

Step 4

Put cooked pieces on a plate lined with paper towels.
