Wild Rice and Chicken Caserrole
Wild rice, ground chicken and spinach casserole. Simply seasoned with salt and black pepper and heavy cream for the sauce. Top with cheddar cheese and bake.
- 1 cup Cooked Wild Rice
- 1 lb Ground Chicken
- 2 boxes (9 oz each) Frozen Chopped Spinach, thawed and drained completely
- 1 Sweet Onion
- 1 cup Heavy Cream
- 1 tablespoon Olive oil
- 1 cup Shredded Mild Cheddar Cheese
- Salt and Black Pepper

Peel and mince onion.
Preheat oven to 350 degrees F.
In a skillet, heat olive oil and cook onion over medium heat until tender. Add ground chicken and cook until ground chicken is cooked through. Season with salt and black pepper.
On 8x8-inch baking dish, layer half of spinach, sprinkle salt and black pepper, half of ground chicken mixture, wild rice and the rest of spinach, Sprinkle salt and pepper and put the rest of ground chicken mixture. Pour into the heavy cream and sprinkle shredded cheddar cheese on top. Bake in the oven for 30-35 minutes.
