Avocado Egg Toast

Another variation on avocado toast, this recipe contains plenty of nutrients, good fats, and filling protein to keep you full 'til lunchtime. 

Simply toast a slice of whole-wheat bread and mash up a quarter avocado. Spread the avocado onto the toast and drizzle with a squeeze of lemon juice. Top with a sunny-side up egg, and season with salt and pepper. Don't hesitate to add fresh herbs or even some crushed red pepper flakes for a little heat.
