Georgia: Khachapuri

If you’re a fan of bread and cheese, you can’t miss this Georgian staple! Khachapuri is a beloved dish in both restaurants and street food stalls, with variations depending on the region. The version with eggs is arguably the most popular Georgian egg dish.


Ingredients (serves 4):

  • 2 ½ cups flour
  • 1 packet dry yeast (typically 7g or 2 ¼ tsp)
  • ½ tbsp salt
  • ½ tbsp sugar
  • ? cup milk (about 2.5 tbsp)
  • ? cup warm water
  • ½ tbsp olive oil
  • 1 cup mozzarella
  • 1 cup feta cheese
  • 1 cup farmer’s cheese
  • 5 eggs

Instructions:

  1. Combine flour, yeast, salt, sugar, milk, and warm water in a bowl. Knead into a smooth dough. Add the olive oil and mix thoroughly. Let the dough rest in a warm place for 1 hour, or until it doubles in size. Knead again and let it rest for an additional 30 minutes.
  2. Dice the mozzarella, feta, and farmer’s cheese, then mix them together in a bowl.
  3. Set the oven to 450°F. Divide the dough into 4 equal portions. Roll each piece into a 20 cm (8-inch) circle on a floured surface or directly on baking paper. Roll up two opposite edges toward the center, leaving about 5 cm (2 inches) in the middle uncovered. Pinch the open ends together to form a boat shape.
  4. Spread the cheese mixture evenly inside the dough boats. In a small bowl, whisk one egg with a bit of water and brush it over the exposed dough edges.
  5. Place the boats on a baking sheet and bake for 15 minutes. Remove them from the oven and use a spoon to create a small well in the center of each cheese-filled boat. Crack an egg into each well, ensuring the egg white doesn’t spill over. Return the boats to the oven for another 5 minutes or until the egg white is just set.
  6. Serve hot: Serve the Khachapuri fresh from the oven. Stir the cheese and the soft egg together with a fork to create a rich dip for the bread.
