Baked potatoes with herbed cottage cheese are a simple yet satisfying classic. Use a waxy variety of potatoes for the best results. Do not peel the potatoes; clean them and prick the skin with a fork. Bake at 400°F for 40 to 50 minutes, depending on size. Here's how to make a delicious herbed cottage cheese topping:


Ingredients (serve 4):

  • 4 medium-sized waxy potatoes
  • 1 1/4 cups low-fat cottage cheese
  • 1 red onion
  • 1 clove of garlic
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1 tbsp fresh dill (optional)
  • 1 tbsp lemon juice
  • Salt, pepper, and a pinch of sugar to taste
  • 1-2 tbsp milk or water (to adjust consistency)
  • Olive oil (optional, for brushing potatoes)
  • Fresh herbs or green onions for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F.
  2. Clean the potatoes thoroughly and prick the skin with a fork. Optionally, brush the potatoes lightly with olive oil for a crispier skin.
  3. Place the potatoes on a baking tray and bake in the preheated oven for 40 to 50 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, prepare the herbed cottage cheese. Peel and finely chop the red onion and garlic.
  5. In a medium bowl, combine the low-fat cottage cheese, chopped onion, garlic, parsley, chives, and dill (if using). Add the lemon juice and mix well.
  6. Season the cottage cheese mixture with salt, pepper, and a pinch of sugar to taste. If the mixture is too thick, add 1-2 tablespoons of milk or water to achieve the desired consistency.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a cross on the top of each potato and gently squeeze them open.
  8. Spoon a generous amount of the herbed cottage cheese onto each potato. Garnish with additional fresh herbs or chopped green onions if desired.
