Green Pea & Sausage Soup

Try this hearty and simple split pea soup with carrots, celery, and smoky sausage for extra comfort.


Ingredients (serves 4):

  • 1 lb green split peas
  • 2 carrots
  • 2 celery stalks
  • 4 smoked sausages or Vienna sausages
  • Salt and pepper to taste

Instructions:

  1. In a large pot, add the green split peas and 6 cups of water. Bring to a simmer.
  2. Peel and dice the carrots and celery. Add them to the simmering soup.
  3. Let it simmer for about an hour.
  4. Cut the sausages into small pieces and add them to the soup. Heat through.
  5. Season to taste with salt and pepper.
  6. Serve immediately.
  7. Enjoy!
