Cabbage & Leek Soup
Cabbage soup has gotten a bad reputation due to various diet trends, but it’s actually incredibly tasty and hearty, especially on cold days.
Ingredients (serves 4):
1 head white cabbage, cleaned and chopped
1 leek, cleaned and chopped
1 tbsp vegetable oil
4 cups vegetable broth
1/2 lb potatoes, peeled and diced
Salt, pepper, caraway seeds, and marjoram to taste
Instructions:
Heat the vegetable oil in a large pot over medium heat. Add the chopped cabbage and leek, and saute until translucent, about 5-7 minutes.
Pour in the vegetable broth and bring to a simmer. Let cook for about 15 minutes.
Add the potatoes to the pot and continue to cook until the potatoes are tender, about 10-15 minutes.
Season the soup with salt, pepper, caraway seeds, and marjoram to taste.
Serve immediately.
Tip: To give this soup a little extra flair, add half a cup of sour cream and a splash of white wine towards the end of the cooking time.
