Creamy Spinach Soup
Enjoy a creamy spinach soup that's both nutritious and flavorful, with a touch of Parmesan for added richness.
Ingredients (serves 4):
- 2 lbs fresh spinach
- 1 tbsp vegetable oil
- 1 1/2 cups vegetable broth
- 2 cups milk
- 1/3 cup grated Parmesan
- Salt and pepper to taste
Instructions:
- Wash the spinach and briefly blanch it in salted water, then drain well and chop.
- Heat the vegetable oil over medium heat, then add the spinach. Saute the spinach until it's wilted, working in batches if necessary.
- Pour in the broth and milk, then bring to a boil.
- Add the Parmesan, stir well, and let it simmer for a few more minutes.
- Season with salt and pepper to taste.
- Serve immediately.
