Creamy Spinach Soup

Enjoy a creamy spinach soup that's both nutritious and flavorful, with a touch of Parmesan for added richness. 


Ingredients (serves 4):

  • 2 lbs fresh spinach
  • 1 tbsp vegetable oil
  • 1 1/2 cups vegetable broth
  • 2 cups milk
  • 1/3 cup grated Parmesan
  • Salt and pepper to taste

Instructions:

  1. Wash the spinach and briefly blanch it in salted water, then drain well and chop.
  2. Heat the vegetable oil over medium heat, then add the spinach. Saute the spinach until it's wilted, working in batches if necessary.
  3. Pour in the broth and milk, then bring to a boil.
  4. Add the Parmesan, stir well, and let it simmer for a few more minutes.
  5. Season with salt and pepper to taste.
  6. Serve immediately.
