Curried Cauliflower Soup

Indulge in this velvety cauliflower soup, enhanced with cream cheese and a hint of curry for a delightful twist.


Ingredients (serves 4):

  • 1 large head of cauliflower, washed trimmed and cut into florets
  • 2 onions, peeled and chopped
  • 1 tbsp vegetable oil
  • 4 cups vegetable broth
  • 1 container cream cheese (8 oz)
  • Salt, pepper and curry powder to taste

Instructions:

  1. Wash, trim, and divide the cauliflower into florets.
  2. Heat the vegetable oil over medium heat and add the onions. Saute until translucent about 2-3 minutes. 
  3. Add the cauliflower, pour in the vegetable broth, and simmer for about 20 minutes.
  4. Stir in the cream cheese, season with salt, pepper and curry powder, to taste.
  5. Use an immersion blender to puree the soup directly in the pot, or transfer it in batches to a blender and blend until smooth. Be careful when blending hot liquids.
  6. Taste and adjust seasoning as needed.
  7. Serve immediately.
