Ingredients (serves 4):
1 onion, peeled and finely chopped
4 cups tomato puree
3/4 cup heavy cream
Salt and pepper to taste
Fresh basil, to garnish
Optional: 1 tsp sugar
Instructions:
Heat a tablespoon of olive oil or butter in a large pot over medium heat. Add the finely chopped onion and sauté until it becomes soft and begins to brown, about 5-7 minutes.
Sprinkle in the sugar (if using) and allow it to caramelize with the onions, stirring frequently for another 1-2 minutes.
Pour in the tomato puree and stir well to combine. Bring the mixture to a simmer.
Reduce the heat to low and stir in the heavy cream. Continue to simmer for an additional 5-10 minutes, allowing the flavors to meld together.
Season the soup with salt and pepper to taste. Adjust seasoning as needed.
