This creamy carrot soup offers a delightful blend of sweetness and savory richness, perfect for a comforting meal. Carrots are also rich in Vitamin A, which is beneficial for maintaining healthy vision, supporting the immune system, and promoting skin health.
Ingredients (serves 4):
1 lb carrots, cleaned and chopped
1 onion, peeled and diced
1 tbsp vegetable oil
4 cups vegetable broth
8 oz cream cheese
Salt and pepper to taste
Instructions:
In a large pot, heat a tablespoon of olive oil or butter over medium heat. Add the chopped carrots and diced onion, and sauté for 5-7 minutes until the vegetables are slightly softened and the onion is translucent.
Pour in the vegetable broth, ensuring the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and let it simmer for about 30 minutes, or until the carrots are tender.
Add the cream cheese to the pot. Use an immersion blender to puree the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
Serve the soup hot, optionally garnished with fresh herbs or a drizzle of olive oil.
