This cozy loaf brings all the charm of a country bakery right to your kitchen. Packed with tender apple chunks and cinnamon-sugar swirls, this apple fritter loaf bakes up moist and golden with a thick vanilla glaze drizzled over the top. It’s sweet, nostalgic, and perfect for slicing up at brunch or pairing with your afternoon coffee!
Ingredients (for 1 loaf):
For the Loaf:
1/3 cup light brown sugar
1 tsp cinnamon
2 medium apples, peeled and diced
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 3/4 tsp baking powder
1/2 cup milk
For the Glaze:
1/2 cup powdered sugar
1–2 tbsp milk
1/4 tsp vanilla extract
Instructions:
Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
Mix cinnamon apples: In a small bowl, toss diced apples with brown sugar and cinnamon. Set aside.
In a mixing bowl, cream together granulated sugar and butter until light. Beat in eggs and vanilla. In a separate bowl, whisk flour and baking powder, then add to the wet ingredients. Stir in the milk until smooth.
Pour half of the batter into the pan. Add half of the apple mixture. Repeat with remaining batter and apples. Lightly swirl with a butter knife.
Bake for 50–60 min. or until a toothpick inserted into the center comes out clean. Let cool in pan for 15 min., then transfer to a wire rack.
Whisk together powdered sugar, milk, and vanilla. Drizzle generously over the cooled loaf.
