Ingredients (Serves 4):
1 medium head of cauliflower
2 tbsp olive oil
4 boneless, skinless chicken breasts
1 tsp smoked paprika
1 tbsp fresh parsley, chopped
1 lemon
Salt and freshly ground black pepper, to taste
Instructions:
Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cauliflower rice and sauté for 5–7 minutes until tender but not mushy.
Meanwhile, season the chicken breasts with smoked paprika, salt, and pepper. Heat the remaining tablespoon of olive oil in a separate skillet over medium heat. Cook the chicken for about 5–6 minutes per side, or until golden brown and cooked through.
Stir the chopped parsley into the cauliflower rice and squeeze over a bit of lemon juice for brightness.
Serve the spiced chicken over the cauliflower rice and garnish with extra lemon wedges and parsley if desired.
