While most food truck businesses end up evolving into sit-down eateries, Cajun Tailgators decided to do the opposite, in opening a food truck following the success of its popular Dallas cafe. Serving up Cajun and Creole specialties, including this Crawfish Pistolette (fried French roll with a cheesy, crawfish étoufée filling), fried boudin balls, red beans & rice, sausage gumbo, etc., it's a spicy hit in the otherwise BBQ-dominated state of Texas.
