Salad

Salad is supposed to be the golden standard of all health foods... isn't it? You might opt for a fresh spring greens for lunch, only to hear your stomach rumbling with hours to go until dinner. This doesn't mean you should swear off leafy greens — just make sure you pack your salads with carbs such as those found in broccoli, sweet potatoes, and quinoa; these are are low on the glycemic index and take your body much longer to absorb. You can also throw in beans, chicken, salmon, or feta cheese for added protein!

Dive into summer with this fresh, light and healthy mango salad!

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
