Bonnotte Potatoes from Noirmoutier

These upscale potatoes hail exclusively from the lesser-known island of Noirmoutier, off the Atlantic coast of France. They've been called the "caviar of the potato world" and are cultivated in a highly specific type of soil you won't find anywhere else. In the past, these babies have sold for up to 500€ (about $600) per kilo. The soil is said to impart an unmatched flavor, texture and appearance, plus delicate, fine skin. We can't help but wonder—does the taste really match the price tag?

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
