Choose the Right Kind of Cheese

Just as important as the bread is the delicious gooey centerpiece: the cheese. It's so important that scientists have even done studies on it! According to the American Chemical Society, a cheese's meltiness can be linked directly with its acidity levels, or the pH. Based on this factor alone, you should use gruyère, gouda, or manchego. However, a general rule of thumb is to steer clear of sharper or aged cheeses and opt for simpler and milder ones instead, such as American, mild cheddar, or Swiss.
