Cut potatoes into 2 inch chunks
- 2 lb yukon gold potatoes, peeled
- 1/4 C milk
- 1/4 C butter
- 3/4 tsp each salt & pepper
- 1 tbsp vegetable oil
- 2 carrots, diced
- 1 onion, chopped
- 1 green pepper, chopped
- 1 tbsp chili powder
- 1/2 tsp cumin
- pinch cayenne pepper
- 3/4 C bulgar
- 2 tbsp flour
- 1 1/2 C vegetable stock
- 1 C corn kernels
- 2 tbsp chopped parsley
Spinach, Red Pepper and Feta Quiche

In saucepan, saute peppers in oil
- prepared pie shell
- 1 1/3 C red pepper, chopped
- 1 tbsp olive oil
- 2 C fresh spinach
- 2 eggs
- 1/3 C cream
- 1/2 C feta cheese
Rockin Moroccan Vegetable Stew

Heat oil in large saucepan over med-high heat
- 2 tsp olive oil
- 1 C chopped onions
- 1/2 C diced celery
- 1/2 C chopped green pepper
- 1 clove garlic, minced
- 3 C vegetable broth
- 3 C peeled, cubed sweet potato
- 1 can (19 oz) diced tomatoes
- 1 can chickpeas, drained
- 1 tsp lemon juice
- 2 tsp grated ginger
- 1 tsp cumin
- 1 tsp curry powder
- 1 tsp coriander
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 raisins
- 2 tbsp peanut butter
- 2 tbsp chopped cilantro

- 6 C spinach
- 1 C feta cheese
- 1 C cottage cheese
- 1 small onion
- 2 tbsp parsley
- 2 tsp dill
- 1/2 tsp salt
- 3 beaten eggs
- 1 tbsp butter
- 1/2 C butter, melted
- 1/2 pkg filo leaves, thawed
Slow-roasted Salmon with Nicoise Salsa

Combine herbes de provence, olive oil, sun-dried tomates, mustard and chili flakes in a mini-chop
- Salmon:
- 2 tsp herbes de provence
- 1/4 C olive oil
- 2 tbsp chopped oil-packed sun-dried tomatoes
- 1 tbsp dijon mustard
- 1/2 tsp chili flakes
- salt
- 2 lb salmon
- Nicoise Salsa:
- 1/2 C mayonnaise
- 2 tbsp chopped sun-dried tomatoes
- 2 tbsp chopped parsley
- 1 tbsp lemon juice
- 1/2 tsp minced garlic
- 2 tbsp olive oil
Jamaican Flounder with Mango Lime Sauce

In a large skillet, preheat oil over medium heat
- 4 fillets of flounder or other white fish
- 3 tbsp Jamaican jerk spice
- 2 tbsp vegetable oil
- 1/2 C flour
- 2/3 C mayonnaise
- 2 limes
- 4 tbsp mango preserves
- 8-10 fresh basil leaves
Tunisian Fish Cakes with Lemon-Paprika Aioli

For Aioli: combine all ingredients in small bowl
- 2 lb white fish fillets
- 1 C finely chopped onion
- 6 garlic cloves, chopped
- 3 tbsp chopped parsley
- 3 tbsp chopped cilantro
- 1 tbsp ground cumin
- 1/2 tsp salt
- 1 tsp ground ginger
- 3/4 tsp black pepper
- 6 tbsp matzo meal or breadcrumbs
- 1 large egg
- olive oil for frying
- Spicy Lemon-Paprika Aioli:
- 1 1/2 C mayonnaise
- 1 1/2 tbsp tomato paste
- 1 1/4 tsp paprika
- 1/4 C lemon juice
- 6 garlic cloves, minced
- 1/4 tsp cayenne pepper
