- 2/3 C brown sugar
- 2/3 C corn syrup
- 1/4 C butter
- 1/2 tsp salt
- 1 tsp vanilla
- 1 1/4 C chopped cranberries
- 1 C chopped walnuts
- 2 purchased pie crusts
Thai-style Coconut Creme Caramel

- 2 C coconut milk (approx 1 can)
- 4 eggs
- 2 tbsp sugar
- 2 tsp vanilla
- 1/2 C maple syrup

Bottom layer: Melt first 3 ingredients
- Bottom layer:
- 1/2 C butter
- 1/4 C sugar
- 5 tbsp cocoa
- 1 beaten egg
- 1 3/4 C graham crumbs
- 1 C coconut
- 1/2 C walnuts
- Second layer:
- 1/2 C butter
- 3 tbsp milk
- 2 tbsp vanilla custard powder
- 2 C icing sugar
- Top layer:
- 2/3 C semi-sweet chocolate (4 oz)

Apple crumble

Combine sugar and butter. Add oats and flour
- 1 C brown sugar
- 1 C rolled oats
- 1/2 C flour
- 1/3 C butter
- apples, cored and sliced

- 6 tbsp cocoa

In large mixing bowl, cream butter with both sugars
- 1/2 C butter
- 1/2 C sugar
- 1/4 C brown sugar
- 1 egg
- 1 tsp vanilla
- 1 C flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- chocolate chips
Chocolate Guinness Cheesecake

Line at 10" spring-form pan with parchment paper
- 2 C chocolate wafer crumbs
- 1/4 C melted butter
- 1 C sour cream
- 3 tbsp corn starch
- 2 C sugar
- 3 lb softened cream cheese (6 pkg x 250g)
- 1 C Guinness
- 4 eggs
- 1 1/4 melted semi-sweet chocolate
Hummus

Place all ingredients in a food processor and whirl until smooth
- 1 can chickpeas
- 1/4 C low-fat sour cream or Greek yogurt
- 2 tbsp tahini
- 2 tbsp lemon juice
- 2 tsp minced garlic
- 1 tsp liquid honey or maple syrup
- 1/2 tsp sesame oil
- 1 tsp salt
- 1/4 tsp ground coriander
- 1/8 tsp ground cumin
Granola Bars

- 2 1/2 C rolled oats
- 1 C coconut
- 1/2 C chopped almonds
- 1/2 C chopped dried cranberries
- 1/2 C semi-sweet chocolate chips
- 1/3 C whole-wheat flour
- 1/4 C ground flax seed
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3/4 C mashed banana
- 1/2 C liquid honey (or maple syrup)
- 1/4 C melted butter
- 1 tsp vanilla

- 1 lb Italian sausage
- 3/4 lb ground beef

- 2 6oz cans tomato paste
- 2 7oz cans tomato sauce
- 1/2 C water
- 2 tbsp sugar
- 1 1/2 tsp dried basil
- 1/2 tsp fennel seeds
- 1 tsp Italian seasoning
- 1 tbsp salt
- 1/4 tsp black pepper
- 4 tbsp chopped parsley
- 12 lasagna noodles
- 16 oz ricotta cheese
- 1 egg
- 1/2 tsp salt
- 3/4 lb mozzarella cheese, shredded
- 3/4 C Parmesan cheese
