Broiled Salmon with Avocado-Mango Salad

In large bowl, stir paprika, coriander and salt
- 2 1/2 tsp paprika
- 2 tsp ground coriander
- 3/4 tsp salt
- 4 salmon fillets
- 1 large mango, cubed
- 1 avocado, cubed
- 1 C canned chickpeas
- 1/3 C chopped cilantro
- 1 tsp grated lemon zest
- 2 tbsp fresh lemon juice
- 2 tsp olive oil
- 6 C romaine lettuce
Sweet Potato Ravioli with Sage Brown Butter Sauce

Preheat oven to 400 degrees
- 2 lb sweet potatoes, diced
- 4 tbsp olive oil
- 2 tbsp brown sugar
- 1/2 tsp ground ginger
- 1 tsp ground nutmeg
- 40 won-ton wrappers

- 1 1/2 C sliced zucchini (cut about 1/4" thick)
- 1 1/2 C coarsely chopped tomatoes
- 1 C chopped green pepper
- 1 C chopped red pepper
- 1/2 C coarsely chopped red onion
- 1 1/2 C chopped potato
- 1 tsp olive oil
- 3/4 tsp dried oregano
- 3/4 tsp dried basil
- 1/4 tsp black pepper
- 1 lb sole fillets
- 1 tbsp freshly squeezed lemon juice

- 8 oz broad rice noodles
- 3 tbsp fish sauce
- 1/4 C lime juice
- 1 tbsp sugar
- 2 tbs oyster sauce
- 2 tbsp chili sauce
- 1/4 C chicken stock
- 1/4 C vegetable oil
- 1 tbsp chopped garlic
- 8 oz medium shrimp, peeled
- 8 oz chicken breast, diced
- 2 eggs, beaten
- 3 C bean sprouts
- 6 green onions, slivered to 1" lengths
- 2 tbsp toasted chopped peanuts
- Garnish:
- 1 lime, cut into 8 wedges

Thai Fresh Spring Rolls

Fill large bowl with hot water, but not too hot
- 1 pkg rice wrappers
- 1 1/2 C rice vermicelli noodles, cooked and rinsed in cold water
- 3/4 C cooked shrimp, chicken or baked tofu
- 1 C bean sprouts
- 1/2 C fresh thai basil
- 1/2 C fresh coriander, roughly chopped
- 1/4 C shredded carrot
- 3 spring onions
- Thai Peanut Sauce:
- 1 C dry-roasted peanuts, unsalted
- 1/3 C water
- 2 cloves garlic, minced
- 1/2 tsp soy sauce
- 2 tbsp brown sugar
- 2 tbsp fish sauce
- 1/2 tbsp lime juice
- 1/2 tsp thai chili sauce
- 1/3 C coconut milk

- 1 medium carrot, cut in strips
- 1 stalk celery, chopped

- 1 can kidney beans, rinsed
- 2 cloves garlic
- 1 tbsp sugar
- 2/3 tbsp oil
- 1 tsp salt
- 1 8oz can tomato sauce
- 1/2 C parsley

- 1 tbsp olive oil
- 1/3 C diced onion
- 1/4 C diced celery
- 1/4 C diced carrot
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp tumeric
- 1 900ml carton vegetable broth
- 1/2 C dry lentils, rinsed and drained
- 1/2 head cauliflower, chopped
- Garnish:
- Lemon wedges
- fat-free yogurt
- chopped green onion
Jerk Chickpeas

- 3 tbsp fresh lime juice
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 1/2 tbsp maple syrup
- 1 1/4 tsp dried thyme
- 1 tsp ground allspice
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp black pepper
- 1 tbsp grated ginger root
- 2 large garlic cloves, grated
- 1/8 tsp chili flakes
- 2 1/2 C cooked chickpeas (1 can)
- 1 C chopped red pepper
- 3/4 C chopped green onions
- 2 tbsp fresh cilantro, chopped
- 2 avocados
