Gum's Baked Rice Pudding

Cook Rice with water & salt in a pot with lid on until rice is fluffy
- 2 Eggs
- 1/2 cup of long grain rice
- 2 cups Boiling water
- 2 cups of milk
- 1/2 cup of sugar
- 1/4 tsp of nutmeg
- 1/4 tsp Cinnamon
- 1/2 tsp of salt
- 1 cup of raisins
- 1 tsp Vanilla
Smoked Mozzarella Chicken & Penne

Marinate the chicken in lemon juice and garlic for an hour in the fridge
- Chicken and Marinade Ingredients:
- 1 1/2 lbs. chicken tenders
- 3 Tbs. lemon juice
- 1 garlic clove - crushed
- 2-3 Tbs. olive oil for cooking chicken
- Pasta Ingredients:
- 3 Tbs. butter
- 1 clove garlic - crushed
- 1 red bell pepper - chopped
- 1/2 cup white wine
- 1 1/2 cups half & half -warmed
- 3/4 cup grated Parmesan
- 3/4 cup grated Asiago cheese
- 1/2 cup sun-dried tomatoes - chopped
- 3-4 slices smoked provolone - cut in thin strips or 1/2 cup shredded Smoked Mozzarella
- salt and pepper to taste
- flat leaf parsley - chopped for garnish
Hash Brown Casserole

Stir the soup, sour cream, butter, potatoes, onion and cheese in a 3-quart shallow baking dish
- 2 lbs frozen hash browns
- 1/2 cup margarine or 1/2 cup butter - melted
- 1 (10 1/4 ounce) can cream of chicken soup
- 1 pint sour cream
- 1/2 cup onion - peeled and chopped
- 2 cups cheddar cheese - grated
- 1 teaspoon salt
- 1/4 teaspoon pepper
White Chocolate Raspberry Cheesecake

Preheat oven to 325 degrees
- 1 cup chocolate cookie crumbs
- 3 tbsp. white sugar
- 1/4 cup butter
- 1 (10 ounce) package frozen raspberries
- 2 tbsp. white sugar
- 2 tsp. cornstarch
- 1/2 cup water
- 2 cups white chocolate chips
- 1/2 cup half-and-half cream
- 3 (8 ounce) packages cream cheese

Pasta Fagioli

Cook the beef in the oil in large stockpot, breaking it up, until it starts to brown
- 2 pounds ground beef
- 1 tbsp. vegetable oil
- 12 oz. chopped onion
- 14 oz. slivered carrots
- 14 oz. diced celery
- 48 oz. canned diced tomatoes
- 2 cups cooked - drained red kidney beans
- 2 cups cooked - drained white kidney beans
- 2 3/4 quarts beef broth
- 1 tbsp. dried oregano
- 2 1/2 tsp.ground black pepper
- 1 1/2 tsp.Tabasco sauce
- 2 (24-oz) jars marinara sauce
- 8 oz. small shell macaroni (or other small dried pasta shape)
- 5 tsp. chopped fresh parsley
Bread and Butter Pudding with Rhubarb Coulis

To prepare custard, combine evaporated milk, whipping cream and vanilla in saucepan and heat to a boil
- Custard:
- 1 cup evaporated milk
- 1 cup whipping cream
- 1 Tbsp. vanilla
- 2 eggs
- 1/2 cup sugar
- pinch salt
- Pudding:
- 4 large slices French bread or enough bread to fill 8 x 8 baking dish
- butter
- cinnamon
- Rhubarb Coulis:
- 2 cups chopped rhubarb (frozen is fine)
- 1/2 cup sugar
- 1/4 cup water
- juice of 1/2 lemon
Sherine's Butter Chicken

Sautee onions, garlic, ginger, spices and vindaloo paste in olive oil
- 2-3 tbsp olive oil
- 2 tsp crushed garlic
- 2 tsp crushed ginger
- ½ lg or 1 small onion chopped
- Chilli powder to taste
- 1 tsp tumeric and curry powder
- 2 tbsp Vindaloo paste (Patak’s brand)
- 1 tbsp tomato paste
- 1 can crushed tomatoes
- 1 500ml carton of whip cream
- Chopped cilantro
- Chicken boneless/ skinless Cubed
- Salt & pepper to taste
- Ground cumin - tumeric - cinnamon: ¼ - ½ teaspoon
Olive Garden Tiramisu

Cut across middle of sponge cake, forming two layers, each about 1 and 1/2 inches thick
- 1 sponge cake (10 to 12" and about 3" tall)
- 3 ounces strong black coffee
- 3 ounces brandy or rum
- 1 and 1/2 pounds room temperature cream cheese or mascarpone (my pick)
- 1 and 1/2 cups superfine or powdered sugar
- unsweetened cocoa

- 2 tbsp Onions

- 2 tsp. Worcestershire Sauce
- 1/3 cup Brown Sugar
