Strawberry Rhubarb Soup

Cut the ends off of the rhubarb and peel the stalks
- 3 1/2 cups strawberries
- 5 stalks of rhubarb
- a few verbena leaves
- 3 tablespoons sugar
Tabbouleh Salad
By 750 International
Cook the bulgur according to the package and strain
- 2 cups bulgur
- 3 cups chopped tomatoes
- 2 cucumbers
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 6 spring onions
- the juice of 3 lemons
- 1/2 cup extra virgin olive oil
- 1/2 bunch of fresh mint
- salt and pepper
Cucumber Avocado Smoothie

Peel the cucumbers and cut them into small pieces
- 2 ripe avocados
- 3 greek yogurts
- 3 cucumbers
- 3 spring onions
- a large handful or rocket/ arugula
- 1 pinch of chilli powder
- 2 tablespoons olive oil
Stuffed Avocado

Cut the avocado in two, and remove the pit
- 1 ripe avocado
- 2 large prawns
- 2 tablespoons sour cream
- 3 tablespoons feta cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon vegetable oil
- salt and pepper
Beef and Mint Salad

Sear the rump steak in a hot pan for 2 minutes on each side
- 10oz beef rump steak
- 1 bunch of fresh mint
- 1 head of lettuce
- 1 bunch of radishes
- 1 tablespoon soy sauce
- 1 tablespoon mustard
- 6 tablespoons grape seed oil
Exotic Fruit Salad

Peel the oranges, grapefruit, kiwis and mango, then cut into slices and place in a large bowl
- 1 Victoria pineapple
- 2 kiwis
- 1 pink grapefruit
- 4 figs
- 12 lychees
- 1 mango
- 2 oranges
- the zest of 1 lime
- 3 tablespoons sugar
- 2 tablespoons rum (optional)
Ricotta and Quinoa Chocolate Lava Cake (Gluten-Free)

Melt the chocolate over a water bath or in the microwave
- 7oz dark, bitter chocolate
- 6 eggs
- 5 oz ricotta cheese
- 4 tablespoons cooked quinoa
- 3oz almond powder
- 4oz powdered sugar
Quinoa with Coconut Milk

Wash the quinoa in cold water
- 1/2 cup quinoa
- 10 fluid ounces unsweetened coconut milk
- 2 tablespoons powdered sugar
- 1 mango
- 1/2 cup frozen raspberry coulis
Egg-white Omelet
By 750 International
Put all the ingredients in a large bowl and mix well with a fork or whisk
- 4 egg whites
- salt and pepper
- 1 tablespoon curry powder
- 1 tablespoon chopped chives
- 1 tablespoon mustard
Zucchini Omelet

Wash and cut the zucchini into small pieces
- 1 large zucchini
- 3 or 4 eggs (depending on size)
- 1 tablespoon of garlic & herb cream cheese (like Philadelphia or Boursin)

- a knob of butter
- a drizzle of vegetable oil
