VIDEO: Tropical Salmon Sushi Cups
These fun Tropical Salmon Sushi Cups make the perfect warm-weather appetizer!
Ingredients
- 1/2 cup rice vinegar
- 2 tbsp sugar
- 2 cups cooked sushi rice
- 1 cup soy sauce
- 1/4 cup chopped cilantro
- 2 tbsp seasame oil
- 1 tsp chili paste
- Salt
- 1 mango, diced
- 1 avocado, diced
- 1 lb salmon, diced
Method
- Combine the rice vinegar and sugar.
- Stir though the cooked sushi rice, and with wet hands, shape into balls.
- Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
- Refrigerate for 15 minutes.
- In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
- Combine the mango, avocado and salmon.
- Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
- Remove the rice cups from the refrigerator, and peel off the parchment paper.
- Distribute the salmon mixture between the rice cups.
- Garnish, serve and enjoy!

Hungarian Stuffed Cabbage

This is the old way I learned to make the Hungarian favorite
- 1 large head of cabbage
- FILLING:
- 1 1/2 pounds of ground steak
- 1 pound of fresh pork sausage
- 1 c. uncooked rice (to yield 2 cups of cooked rice)
- 1 large onion chopped small
- 3 eggs
- pepper to taste
- SAUCE:
- Combine,
- 1 large 28 ounce can of chopped stewed or regular tomatoes
- 2- 15 ounce cans tomato sauce
- Another chopped onion
- 1 stalk of celery, chopped
- 1 t. paprika
- pepper to taste
- 2 T. of sugar (to counteract the tomato acid)

- 5 eggs, 4 hard boiled; 1 raw, beaten
- 1 # pork sausage
- 2 oz bread crumbs
- oil for deep frying
- flour with 1/2 t ea. salt and pepper combined

- 1 lb. pork sausage (maple flavor or sage)
- 1 teaspoon dry mustard powder
- 1/2 teaspoon salt
- 6 egg
- 2 cups milk
- 1 1/2 bags cheddar cheese ( at least 4 cups)
- Box of cheddar garlic croutons (Marie Calendar good brand)
