Zucchini Bread

  • 3 c. all purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 3 tsp. ground cinnamon
  • 3 eggs
  • 1 c. veg. oil
  • 2 1/4 c. white sugar
  • 3 tsp. vanilla extract
  • 2 c. grated zucchini
  • 1 c. chopped walnuts

Step 1

Preheat oven to 325

Step 2

Grease and flour 2 8x4 pans.

Step 3

Sift flour, salt, baking powder and soda, cinnamon in a bowl.

Step 4

beat eggs, oil, vanilla, sugar in a bowl together.

Step 5

Add sifted ingredients to the creamed mixture. and beat well.

Step 6

Stir in zucchini and nuts until blended well.

Step 7

Pour batter into pans.

Step 8

Bake for 40-60 mins or until tester comes out clean. (toothpick)

Step 9

Cool in pan on rack for 20 mins

Step 10

Remove bread from pans, and let it completely cool down.
