- 3 lb shredded potatoes
- 1 1/2 c shredded cheddar cheese
- 1 1/2 c half & half
- 2 tsp dry mustard
- 1 12/ tsp salt
- 1c finely chopped bell pepper
- 6 eggs
- 1 1/2 c finely chopped ham

saute potatoes in 2Tbsp oil until limp and pale yellow.put into a greased 9x13 pan, pressing onto bottom and up sides of pan. This can be refrigerated up to 1 day.
whisk together eggs, milk, 1 tsp salt and dry mustard
sprinkle ham, peppers, and cheese over potatoes in pan.
pour egg and milk mixture over ham and back at 350 for 30-40 min
