  • 2 green bell peppers (diced)
  • 1 white onion (diced)
  • 1/2 bunch of fresh cilantro (for garnish)
  • 1 tablespoon of fresh lemon juice
  • 1 jalapeno chile pepper (diced)

Step 1

In a medium bowl, mix tomatoes, green bell peppers, white onion, cilantro, lemon juice and jalapeno chile pepper. Cover and chill in the refrigerator until serving.

INGREDIENTS:

  • 2 chicken breasts

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
