This hearty, savory loaf brings everything you love about a traditional breakfast, but baked in a loaf pan for easy slicing and serving. Layers of shredded potatoes, crumbled sausage, colorful peppers, and fluffy eggs bake up golden in a loaf pan—perfect for feeding a few hungry guests or prepping ahead for the week. It’s cozy, satisfying, and is sure to be a brunch staple!
Ingredients (for 4-6 servings):
6 large eggs
1/2 cup milk
1 1/2 cups frozen shredded hash browns, thawed
1/2 lb breakfast sausage, cooked and crumbled
1/2 cups shredded cheddar cheese
1/4 cups diced red bell pepper
1/4 cup diced green bell pepper
2 tbsp chopped green onion
1/2 tsp salt
1/4 tsp black pepper
Butter or nonstick spray, for greasing
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a standard loaf pan.
In a large bowl, whisk together eggs, milk, salt, and pepper.
Spread the hash browns evenly into the bottom of the loaf pan. Top with cooked sausage, bell peppers, and green onion. Pour the egg mixture over the top and sprinkle with cheese.
Bake for 40–45 min. or until the center is set and the top is golden.
Let rest for 5–10 min. before slicing. Serve warm with a side of fruit or a little hot sauce.
