Wild Berry Baked Oat
Warm, nourishing, and bursting with juicy berries, this baked oatmeal is a comforting start to any morning. Studded with almonds, walnuts, and toasted coconut flakes, it bakes up golden on top with a soft, almost cake-like texture underneath. It’s the kind of wholesome breakfast that feels indulgent but fuels you for the day ahead—perfect for weekend brunch or make-ahead weekday mornings.
Ingredients (for 6 servings):
- 2 cups rolled oats
- 1/2 cup chopped walnuts
- 1/4 cup sliced almonds
- 1/4 cup unsweetened coconut flakes
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 3/4 cups milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1 large egg
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
- 1 1/2 cups mixed berries (fresh or frozen, like blueberries, raspberries, or strawberries)
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or small baking dish.
- In a large bowl, combine oats, walnuts, almonds, coconut flakes, baking powder, cinnamon, and salt.
- In another bowl, whisk together milk, maple syrup, egg, melted coconut oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the berries.
- Pour mixture into the prepared pan. Bake for 35–40 min. or until the top is golden and the center is set.
- Serve warm as-is or with a splash of milk or dollop of yogurt.
