Wild Berry Baked Oat

Warm, nourishing, and bursting with juicy berries, this baked oatmeal is a comforting start to any morning. Studded with almonds, walnuts, and toasted coconut flakes, it bakes up golden on top with a soft, almost cake-like texture underneath. It’s the kind of wholesome breakfast that feels indulgent but fuels you for the day ahead—perfect for weekend brunch or make-ahead weekday mornings.

Ingredients (for 6 servings):

  • 2 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup sliced almonds
  • 1/4 cup unsweetened coconut flakes
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 3/4 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1 1/2 cups mixed berries (fresh or frozen, like blueberries, raspberries, or strawberries)

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or small baking dish.
  2. In a large bowl, combine oats, walnuts, almonds, coconut flakes, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, maple syrup, egg, melted coconut oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the berries.
  5. Pour mixture into the prepared pan. Bake for 35–40 min. or until the top is golden and the center is set.
  6. Serve warm as-is or with a splash of milk or dollop of yogurt.
