For most omnivores, there are few dinner disasters worse than realizing that one of your guests doesn't eat meat or has another dietary restriction. Whether you were told in advance and forgot (it happens) or learn at the very last second, all is not lost.

Take stock of all your dishes, especially the sides: which are already meat free? Which haven't been made yet, and can be made meat free? (i.e, by not including bacon in the Caesar salad). These may already be enough to provide a hearty meal. If you still have ingredients in the fridge, see if you can put together a quick salad or an easy roasted vegetable platter

Above all, be totally honest with your guest about the ingredients in each dish. Even if you could slip some animal product by them, it wouldn't do them, or your karma any good at all.
