Biryani is a traditional Indian rice dish. The recipe for biryani is similar to pilaf, except that for biryani the rice is cooked separately from the sauce, and then the two are layered and cooked together. There are countless varieties of biryani, including chicken biryani, goat biryani, fish, shrimp, vegetarian, spicy, mild...the list is endless! I love biryani because it's a balanced meal in itself, and can be spiced according to your taste. Biryani is always an impressive dish to serve guests, and you can get especially creative with the presentation. I love to scatter fresh pomegranate seeds on top of the plate before I take it to the table, but you can also try quartered hard-boiled eggs, thinly sliced red onion, almond slivers or even chopped red and green chilies to add a colorful touch. Our biryani recipes are a great introduction to Indian food; full of warm spices and exotic aromas. Not to mention, biryani is the ultimate comfort food for rice lovers.

These baked Cheesy Eggplant Hedgehogs are totally adorable, tasty and really easy to make! 

 

Ingredients

  • 3 large eggplants
  • 1 cup olive oil
  • 1/4 cup chopped basil
  • 1 garlic clove, minced
  • Salt
  • Pepper
  • 4 cup shredded cheese


Method

  1. Mix the olive oil, chopped basil, garlic, salt and pepper in a bowl.
  2. Carefully slice the eggplant on it's side in a cross-hatch pattern, without cutting all the way through.
  3. Lay the eggplants inside an oven-safe baking tray.
  4. Pour the oil mixture over the eggplants, taking care to pour between the slices.
  5. Stuff the gaps in the eggplant with shredded cheese.
  6. Cook in the oven at 355°F for 45 minutes, until the flesh is cooked and the cheese totally melted.
  7. Serve and enjoy!

1)Marinate the washed and bite sized cut chicken with all the above mentioned spices (2-13)

  • 1)Trimmed and ready chicken tenderloins - 1.18 lb appox
  • 2)Turmeric - 1 and1/2 tsp
  • 3)Ginger garlic paste - 1 1/2 tbsp
  • 4)Coriander powder - 2 tbsp
  • 5)Red chilli powder - 1 tbsp
  • 6)Garam masala powder - 2 tsp
  • 7)Kitchen king masala - 2 tsp
  • 8)Whole black pepper corn - 2 tsp
  • 9)Biriyani/tandoori masala - 1 tbsp
  • 10)Clove pieces - 4 to 5
  • 11)Salt - as per taste (approx 1 tbsp)
  • 12)Kashmiri red chilli powder -1 tbsp (reduce to 1 tsp if you want less spice)
  • 13)Shahi jeera or cumin seeds - 1 tbsp
  • 14)2 cups of washed basmati rice

  • Chicken - 1 kg (clean & cut the chicken medium sized pieces)
  • Basmati Rice/ long grain rice - 2 cups
  • Tomatoes - 3
  • Ginger Paste - 2 tbsp
  • Garlic Paste - 3tbsp

  • Ginger Garlic paste - 4 tbsp
  • Salt to taste
  • Black peppercorns (whole) - 1 tbsp

  • Shan brand Briyani masala - 2 tbsp/ any chicken masala (preferably butter chicken masala)
  • Any edible Oil - 3 tbsp
